Quick answers (from the manual)

What's the standard plate?
Protein + 2 sides. Cornbread is a separate add-on, not included.
Coleslaw scoop size & temp?
#12 scoop, served cold (≤ 40°F).
When do I start the next batch of a side?
When the pan hits about 25%.
